This wine is made from a selection of fruit from Hollick's older Cabernet Sauvignon vines. It is grown on shallow terra rossa soils in the Neilson’s Block and Wilgha vineyards in Coonawarra, which were planted in the 1970s and 1980s. Individual handpicked parcels of grapes were handled carefully to retain intense fruit flavours developed in the vineyard. Subsequent maturation in French oak (20% new) provides it with structure and presence. Vibrant scarlet in colour with aromas of blackcurrant and mulberry fruit that provide the introduction to lingering chocolate and spicy fruit. On the palate there is blackberries & plums, with a touch of spice. A mouth watering wine. The subtle tannins provide balance whilst the lingering chocolate adds an elegant finish.The supple structure of this wine enables it to be consumed now, although 5 to 10 years in a good cellar will be amply rewarded.
